DECADENT EINKORN BROWNIES

These are delicious, and with Einkorn flour, they have the added benefit of an ancient grain that is healthy.  For Peppermint Brownies, add 7 drops of Peppermint essential oil to the brownies once the entire recipe is mixed.  Be sure to use essential oils that are labeled on the bottle “for internal use”.  Young Living Peppermint oil is labeled as GRAS, Generally Regarded as Safe. All essential oils cannot be consumed internally.  And, some brands of oils are NOT safe or intended for internal use,  since they have added chemicals or solvents that may be harmful.

Be safe and choose the best essential oils that are pure Therapeutic-Grade, and that say on the label they are safe for internal use.

Einkorn Decadent Brownies are made with whole-grain einkorn flour and white spelt flour (an ancient grain).  The reason I like to add white spelt to the Brownie mix, and to many baked items, is because white spelt has most of the bran removed.  The whole-grain einkorn flour that I use has all the bran remaining and all the nutrients of the bran in tact, so the final brownies have the benefit of the whole-grain.  Because 100% whole-grain in some baked items can be tricky, I often combine my whole-grains with white spelt.  Be sure you are using white spelt and not whole-grain spelt or the product will not be the same.  Using whole-grain spelt will make the brownies much drier and the texture will not be the same.  The perfect balance for this recipe is half whole-grain einkorn and half white spelt.  It works!

 

Decadent Einkorn Brownies

(These are amazing)

2 sticks butter

1-1/2 cups chocolate chips

3 ounces unsweetened chocolate

 

4 large eggs

4 teaspoons instant coffee granules

3 teaspoon pure vanilla extract

1 cup unrefined cane sugar

 

1/4 cup whole-grain einkorn flour

1/4 cup white spelt flour

1-1/2 teaspoons  aluminum free baking powder

1/2 teaspoon salt

 

1/2 cup chopped and toasted walnuts

 

Preheat oven to 360 degrees.  Line a 9 x 13 inch pan with parchment paper and lightly grease with butter.

In double broiler, melt the butter, chocolate chips, the unsweetened chocolate.  When melted, set aside and cool 15-20 minutes.

In the meantime, stir (but do not overbeat) together the eggs, dry coffee granules, vanilla, and sugar (I use a fork to mix together).

Stir the cooled chocolate mixture into the egg mixture.  Mix well.

In a medium bowl, whisk together the einkorn flour, spelt flour, baking powder and salt.  Add to the chocolate mixture. Gently stir by hand to mix.

Spread mixture evenly into prepared pan.

Bake in preheated oven  30-35 minutes or until a toothpick inserted in the center comes out clean.  Do not overbake.

Serves: 12

I am currently working on a book that includes Einkorn flour, and I have found that we love this amazing ancient grain.  I’ll post for about Einkorn and some of the fabulous way we have used it in our household, from soups, to salads, to my favorite Oatmeal cookies.  Amazing.  Watch the YouTube below and look for more of my posts on Einkorn.   Einkorn is high in protein and the starch structure is different than modern wheat.
